I can’t think of a better way to celebrate Chanukah than with a Chanukah Gelt Cookie Cake! It’s easy, beautiful, delicious, and oh so celebratory.
One week until Chanukah. YAY! I can’t wait for the potato latkes, sufganiyot, homemade applesauce (which may or may not be simmering on my stove top right now), and of course lots of Chanukah gelt.
I do have one Chanukah cooking confession to make. I’ve never made sufganiyot. I know. It’s embarrassing, considering how much I adore making desserts. Usually I’m not intimidated by anything when it comes to the kitchen, but something about all the steps involved in sufganiyot seems a little…much. Making the dough, letting it rise, rolling and forming the donuts, letting them rise again, then frying, filling with jelly, dusting with powdered sugar…that’s just too many steps for an antsy cook like me.
But I can’t not make a festive treat for the miracle of lights. I can’t pass up an excuse to make dessert! That’s where my Chanukah Gelt Cookie Cake recipe comes in. A delicious cookie cake topped with gelt, frosting, and sprinkles is the perfect way to celebrate. It’s made with my all-time favorite chocolate chip cookie recipe, which just so happens to fit perfectly into a 9-inch round cake pan. It’s a Chanukah miracle!
